Easy Egg Bites



I am always looking for ways to make mornings easier – and whipping up a batch of these Easy Egg Bites is top of my list. Grayson is allergic to egg, but the rest of us are not. I do not serve eggs often because I want to keep our household as safe as possible for everyone and do not want him to be excluded.

However, eggs are important in Owen’s diet (and ours!), and I like that these can be literally popped into your mouth with one bite and less mess. I make a big batch, pop them into the fridge, and then re-heat them during the week in the microwave for a simple, healthy breakfast.

Here is how I make them!

Ingredients:

6 eggs

1/8 cup oat milk

1/8 cup coconut cheese

9-12 pieces chopped cooked broccoli

Salt, pepper and garlic powder to taste

Directions:

Pre-heat oven to 350 degrees.

Whisk all ingredients in a bowl except the broccoli.

Spray a mini muffin pan with your safe cooking spray of choice.

Place one piece of broccoli in each mini muffin spot.

Use a mini ice cream scoop to add the egg mixture to each mini muffin spot in the tray. Fill about ¾ full.

Bake for 15 minutes.

Notes:

I use oat milk and coconut cheese due to our allergies. Use whatever milk and cheese combo works for your family!

You could use any veggie or meat in this dish; just make sure it is pre-cooked and chopped up.

I leave some plain for my big guy who does not love broccoli. They are delish without the veggies, too!
